I can never decide whether it’s the color or the flavor of this cake that is more irresistible. The saffron and butter give it a rich yellow color and the orange glaze that soaks in is like pure sunshine. The glaze really makes the cake special (and also helps preserve it for up to a week), so do take that easy extra step. When I can get them, I use tart Seville oranges or exotic blood oranges in the glaze.
